Instructions
Wash and drain the Sakura Farms Goat Bone In Skin On Cubes
Fill wok with cold water, add Goat cubes with 2 slices of ginger, 1/2 tablespoon Sichuan Dried pepper and 1 tablespoon cooking wine and cook on high heat. Boil for 2 minutes.
Turn off the stove, take out the Goat cubes and wash in running water.
When the oil is hot but not smoking, add ginger slices, green onion chunks, dried tangerine peels and dried bay leaves stir fry for 1 minute, then add Goat cubes and continue stir fry for 2-3 min.
Add diced carrots, 1 tablespoon of cooking wine, stir fry for another 1.5- 2min, add hot water (liquid must cover ¾ of the meat)
After the water boils, add dark soy sauce, light soy sauce, rock sugar and cook on high heat for 3 minutes.
On low heat, cover the wok with a lid and stew for around 40- 50 minutes.
Cook on high heat and bring the sauce to simmer, and add salt.
